So I was a little disappointed in my small weight loss this week but I have to keep telling myself that any loss is a good loss. Even though it’s not what I had hoped for, I know that I’ve been off track for the past few weeks and eating well for just one weekend isn’t going to make up for all of that. So I am definitely thankful for a loss this week and I am hopeful that next week’s weigh-in will be even better. At least my weight is finally moving in the right direction and I feel like I am in a better place mentally than I have been lately.
I have a good plan for this week, I have already pre-tracked all of my meals and I am feeling really positive about staying on track this week. My husband is now working in the field so it is a bit stressful dealing with the kids by myself but hopefully we can keep our routine going and I will stick with my meal plan. So speaking of meal plans, this is what we are having this week!
Monday: Out to eat
Tuesday: Chicken Enchiladas
Wednesday: Beef Stroganoff
Thursday: Skillet Chicken Parmesan (Recipe from Hungry Girl Simply 6 Cookbook)
Friday: Homemade Pizza (Using 2 ingredient dough – 1c self-rising flour & 1c plain nonfat greek yogurt; topped with 1/2c Trader Giottos fat free pizza sauce, 5oz Trader Joes lite shredded mozzarella cheese, 25 Hormel turkey pepperoni and mushrooms)
Saturday: Cheeseburger Sliders (Recipe here)
Sunday: Chicken Cordon Bleu Roll-ups
