I hope you all had a great weekend! Mine was a bit busy because I had to start my job training on Friday night, then Saturday we went to a baby shower for my cousin and got to meet her new baby! And yesterday I spent the day doing some housework, planning out my meals for the week and grocery shopping with my 4 year old.
I didn’t eat very well this weekend so I know that I will have a significant gain at my weigh-in today, but the important thing is that I am back on track and I have a good plan for this week. I am going to be eating out a couple of days this week, one day I have a training that I have to attend and on Saturday my sister and I are having a shopping day so we will be going out to eat but I’m going to do my best to stay on track as much as I can.
I am sharing my supper menu for the week, as well as my lunches because I thought it would be helpful for others to see what I make for lunch and maybe it will give you some ideas. For breakfast I almost always have my protein coffee made with espresso and a Premier Protein caramel shake, along with a banana if I need something more.
Monday: Loaded Chicken Bubble Up Bake
Tuesday: Chicken alfredo pasta (Using Birdseye Steamfresh Veggie Made Rotini Alfredo, cooked chicken breast and cooked broccoli)
Wednesday: Tuna sandwich (Using canned tuna, light miracle whip, sweet pickle relish, chopped celery and green onions; served on 2 slices of Village Hearth light wheat bread)
Friday: Tuscan Roma Pizza (Using 2 ingredient dough made with 1c self-rising flour and 1c plain nonfat greek yogurt – rolled on a floured surface into a pizza crust and pre-baked for 8 minutes at 450; Topped with 1/2c light alfredo sauce, 5oz Trader Joe’s lite shredded mozzarella, sliced tomatoes and fresh spinach – Baked for 8-10 minutes at 450 or until brown on the top)
Tuesday: Homemade Pizza (Using 2 ingredient dough made with 1/2c self-rising flour and 1/2c plain nonfat greek yogurt – Pre-baked at 450 for 5 mins; Topped with 1/4c Trader Giotto’s fat free pizza sauce, 3oz Trader Joe’s lite shredded mozzarella and 15 slices of Hormel turkey pepperoni – Baked at 450 for 7-8 mins)
Wednesday: Buffalo Chicken Egg Rolls
Thursday: Loaded Philly Stuffed Baked Potato
Friday: Trader Joe’s bread cod filets w/homemade tarter sauce using light Miracle Whip & sweet pickle relish
Sunday: Southwest Chicken Egg Rolls
