I hope you all had a good weekend! One of my kids was sick so we were busy taking care of him and he seems to be feeling a lot better today thankfully! I have been off track quite a bit this week, so some of the meals we are having this upcoming week are repeats, but I still hope many of you find these meal ideas helpful.
I’m not sure if I will make it to my WW workshop today since we are supposed to get some snow, so I am planning on making the chicken sandwiches in case I don’t go. If not, I will probably grab Subway after the workshop.
This is what we are having this week!
Monday: Bacon Jack Chicken Sandwiches
Tuesday: Beef Tacos (Using 96% ground beef mixed with taco seasoning, crispy taco shells, and topped with lettuce, tomato, taco sauce and fat free sour cream)
Wednesday: (Using whole wheat spaghetti, Ragu simply chunky garden vegetable pasta sauce and 1lb 96% ground beef)
Thursday: Parmesan Baked Pork Chops
Friday: Homemade Pizza (Using 2 ingredient dough – 1c self-rising flour & 1c plain nonfat greek yogurt; topped with 1/2c Trader Giottos fat free pizza sauce, 5oz Trader Joes lite shredded mozzarella cheese, 25 Hormel turkey pepperoni and mushrooms)
Saturday: BBQ Chicken Sandwiches (I use G Hughes sugarfree bbq sauce, omit brown sugar, and serve on Village Hearth light buns)
Sunday: Baked Chicken Parmesan
So that is the menu for this week. I plan to follow it precisely and stay on track. I don’t know if I will make it to my weigh-in today but I’m still going to stay on track and hope that if I don’t make my weigh-in today, then I should have a really good one next week. Have a great week!
